These bites are a result of 2 things…. my daughter recently eating a similar slice without knowing it had peanut butter and she is allergic to peanuts also helping my mother in law clear out her pantry. It was quite frightening to say the least when we found out that a slice we had bought in a cafe actually contained peanuts! The one thing we had never given our daughter is peanuts due to the seriousness of her allergies. Daddy quickly took her to a pharmacy and got some antihistamine, which surprisingly worked so well and we didn’t have to use an epi pen. We were told to keep an eye on her for 24 hours as she could still have a reaction to the tiny bite she had. Spending a few days at the in laws I used pantry items that needed finishing and required to be used to make these bites.

Simple to make without any baking these are a great afternoon treat that the whole family can enjoy. Nuts provide a great source of nutrition, protein and many essential healthy fats, vitamins and minerals. I was fortunate to be able to use all different nuts that I don’t usually buy in Bali. I added in a variety of seeds for a boost of omega-3 and added fiber.  As a special treat I used the unsulphured dried cranberries and goji berries for added sweetness and to entice kids later that afternoon. I wanted to create a healthy treat as we were expecting family to visit but I know that some kids may have texture issues and some don’t like seeds or even nuts. To try combat this situation I added some Lindt chocolate to the top of the slice as most kids love chocolate and to help disguise the bar itself from a birds eye view. 

I hope you enjoy these as much as we did. I have got this recipe up as quickly as possible as my friends and family who tried them have been asking for it ever since.

 

 

GLUTEN FREE GRAIN FREE BERRY NUT AND SEEDED BITES 

Ingredients

1 tbs Macadamia nut butter or nut butter of choice

25g goji berries

30g pumpkin seeds

30g desiccated coconut 

40g cranberries 

50g whole almond Nut

50g pecan nuts 

55g Chia seeds 

80g Brazil nuts 

85g omega seed mix (containing sesame seeds, sunflower seeds, pumpkin seeds, flax seeds

150g butter of choice

150g sweetener of choice (maple syrup, raw honey or rice malt syurp)

4 tbs baobab  (optional)

50g Dark Chocolate (optional)

 

Method

 

1.  In a saucepan gently melt the butter. Let it slightly cool and add in sweetener of choice (maple syrup, raw honey or rice malt syurp) and nut butter and mix well.

 

2. Blitz the almond, pecan, brazil nuts and the omega seeds mix (if you cant find one already made use a mixture of sesame, sunflower, pumpkin and flax seeds) for 5-10 seconds depending on the power of your blender or food processor. You don’t want it like flour and you do want a few chunky bits of nuts. I placed the omega seed mix into the bottom of the blender to blend into more a flour like consistency and to achieve chunky nuts.

 

3.  Transfer the mixture to a large bowl.

 

4. Using a knife roughly chop the goji berries and cranberries and add this to the bowl.

 

5. Add in remaining dry ingredients.

 

 

6. Pour the melted butter or coconut oil mixture over the dry ingredients and mix until well combined.

 

7. Place baking paper into dish of choice and pour mixture on top. Using the back of a spoon even it mixture out into the dish. Place into the freezer to set for 2 hours.

 

8. Once set melt chocolate of choice is using and lightly cover the top of the slice.  Let it harden and then cut into desired sized pieces.
